Alain Vaidie, Head Chocolatier, will tell you the fabulous story of chocolate, from the harvest of the bean to our taste buds! You’ll learn more about where chocolate comes from, how it was discovered, how it’s processed…
and, above all, how and why it tastes the way it does.
The chef creates recipes right before your eyes, commenting on each step of the process. This way of doing things will help you understand why and how each ingredient contributes to the final sensation. The chosen ingredients enable the desserts and truffles to deliver all the intensity of taste, texture and sensations necessary for pleasure and emotion. Our watchwords: harmony and balance of taste. All in good fun.
After this experience, it’s certain that you’ll never taste chocolate the same way again!
At the end of the workshop, each participant leaves with a box of 24 chocolates (truffles), as well as the recipes.
